St. Patrick's Day Pot O' Gold Rainbow Cupcakes

My little leprechauns are still home, we are still finding fun and easy activities to do. We've made lots of treats over the years, but this one has to be their favorite! Ring in St. Patrick's Day with these Pot O' Gold Rainbow cupcakes! Easy treats with a big "wow" factor are great projects with kids. The frustration level stays low while the creativity level stays high. My youngest feels so accomplished with his masterpiece. It's pretty hard to mess up these cupcakes. And if you do mess it up, at least it tastes yummy!



Little fingers are still learning fine motor skills. Icing bags can be hard to manipulate. This Wilton icing bag was easy for the kids and it has it's own decorating tips!



You only need a couple of things for these adorable cupcakes.By the way, I have no idea what my middle kid is doing in this picture :) We used a boxed cake mix and made chocolate cupcakes. You could buy store bought cupcakes or even use muffins.



I bought all of my items from Target. I added the link above to each item from Target. If you can't find these at Target, I would suggest Amazon or Walmart or other grocery stores. I've seen this rainbow candy in bulk candy stores as well. They come in long wound up strips that you would cut & pay by the pound. If you can't find these exact items you can always improvise. The clouds could be mini marshmallows! No food coloring? Make the base white instead of green and call it a huge cloud! Can't find the rainbow candy? Use different colored licorice as the rainbow. Use what you have available and use your imagination! Different variations of these cupcakes all are over Pinterest. So just have fun!

The base is supposed to be grass. So for the grass, we dyed store bought icing using blue & yellow food color gel. This was my oldest child's job. Watching the 2 different colors create a beautiful new color was pretty cool for them.


Then we used the white icing bag with the star tip. These are the clouds at the end of the rainbow. It's nice that these bags have the decorating tips with it. No need to buy anything else!


Then we cut the rainbow candy strip in half. These Air Head candies were the perfect size for each cupcake once they were cut in half. As stated above, if you can't find these Air Head candies, you can buy these at bulk candy stores as well.


Then place your rainbow on the clouds. Make sure the rainbow candy had has enough clouds (white icing) to stand securely.


Add your Rolo candy as your pot of gold and your done!
