Very Berry Strawberry Cookies


Anyone else growing strawberries and patiently waiting? We can't wait to savor our homegrown strawberries! My family loooves anything strawberry flavored, especially strawberry cookies! I used to do all of my strawberry baking during strawberry season. But I've found a way to enjoy all natural strawberries all year round! This cookie recipe uses strawberry powder and freeze dried strawberries and it's packed with so much flavor, and none of the artificial flavors, fake colors, or preservatives! Needless to say this is indeed a Very Berry Strawberry cookie!

Satvikzone uses only the best quality ingredients. These two products only have strawberries in them...that's it!

 

Ingredients

3 cups flour

1 teaspoon cream of tartar

1 teaspoon baking powder

1 teaspoon baking soda

4 tablespoons strawberry fruit powder

1/4 teaspoon salt

1 1/2 sugar

2 sticks (1 cup) butter softened

2 eggs lightly beaten

1 teaspoon almond extract

1/3 cup freeze dried strawberries roughly chopped


Icing

1 cup powdered sugar

1 teaspoon strawberry fruit powder

2 tablespoons lemon juice


Instructions


  1. Preheat oven 350 degrees and prepare a baking sheet with parchment paper or a silicone baking mat.

  2. In a large bowl, combine dry ingredients - flour, cream of tartar, baking powder, baking soda, 4 tablespoons fruit powder and salt. Set aside.

  3. In another large bowl, use a mixer and cream sugar & butter. Add eggs till we'll combined. Gently mix in chopped freeze dried strawberry.

  4. Slowly mix in dry ingredients by the scoop full, just till combined.

  5. Place about 1 1/2 teaspoons of cookie dough on prepared cookie sheet. Using a cookie scoop is very helpful.

  6. Bake for 10-12 minutes making sure not to over bake.

  7. Let cool for a couple minutes before mixing cookies to a cooling rack.

  8. When cookies are completely cooled, mix icing ingredients till smooth. Place paper towel under cookie rack for easy clean up. Immediately drizzle icing onto cookies. Icing will harden and set in about 1 hour. Or eat right away if you can't wait!

The icing on top gives the cookies an added punch of berry flavor!These cookies are great for gifting and stacking because the icing hardens nicely. If you love strawberries, these are the cookies for you!
